Robinson Confections is raising the bar in premium candy, blending Belgium’s finest old world chocolate with the modern sophistication of craft cocktails in an original line of Liqueur-based English Toffees. Their other lines include couverture-grade Belgian chocolates with inclusions, keto/low-carb couverture dark chocolates, soft nut brittles. and their own version of the viral TikTok "Dubai Chocolate Bar". They also offers dairy-free, vegan-friendly, and ultra-clean ingredient options. Their website allows shoppers to purchase bagged candy or design custom sampler gift boxes, and they offer both custom corporate branding and wholesale accounts.
International Chocolate Salon awards include Gold medals for "Top Artisan Toffee" (2022) and "Best Spicy Chocolate" (2021), as well as Bronze medals for "Best White Chocolate" (2022) and "Top Artisan Toffee" (2023). Their chocolate is fair trade certified, and since their founding they have supported charitable organizations around the Inland Northwest region including hospice centers, Make-a-Wish, domestic violence victim advocacy, infant SafeStart programs, support for families going through pediatric brain cancer treatment, and more.
Founding Story
Pamela was a single mother raising 3 boys. She was known in her community for her creative "optical illusion" specialty cakes, elegant multi-tiered wedding cakes, and decorative cookies, as her passion was using her culinary talents to bring happiness to those around her. Over the years, many people had told her she should go into business, but she'd never had the means to do it while working long hours raising her sons.
Todd was a widower with 4 grown daughters. He was a long-time entrepreneur who had launched a Silicon Valley media agency and a CGI software company during the dot-com boom, started a motorcycle racetrack school running events in California and Nevada training thousands of riders, and a motorsports business that after 17 years was struggling to survive the tariff wars and near-collapse of the motorsports parts industry from the 2008 recession.
They met in 2017 and married the following year. Pamela left her career in supply chain to work with Todd at his parts business, but knew she wanted to use her culinary skills to bring in extra money as she saw Todd stressed over the struggles in his business and him suffering from chronic migraines. She suggested making and selling soft peanut brittle, a popular known delicacy in the Inland Northwest (she and her mother had for years made it to give away at Christmas). Todd researched the gourmet confections market space for her, and found it was a good opportunity for them to let Pamela pursue her passion while making extra money.
Pamela launched the business (as "Robinson Soft Brittle") in summer 2019 with a little startup help from her parents, with Todd providing business advice and operational support. They did their first public event that July and were overwhelmed with the response. This was followed by the Coeur d'Alene Downtown Street Fair and then Fall Fest at a local ski resort. At the latter event, although bringing several hundred pounds of soft peanut brittle, they sold out so quickly that they had to pull an all-nighter cooking candy right in the middle of the festival to make enough candy to finish the weekend. Clearly, they were on to something big.
After the decision was made to close the motorsports company, Todd threw himself into working with Pamela in her company and with her culinary talents and creativity along with Todd's head for business they were the perfect team. The company has grown from a single product in 2019 to over two dozen, with the majority of them being original recipe creations. The company rebranded as "Robinson Confections" in 2024 to reflect their broader product lineup. Accolades for their confections including multiple awards at the International Chocolate Salon.

Pamela Robinson, Todd Robinson
Owner & Executive Chef, Operations Manager
The Robinsons consider themselves the perfectly paired husband-and-wife team.
Company founder and owner Pamela Robinson is a self-taught baker, confectioner, and candymaker. Prior to starting this venture, she produced tiered wedding cakes and "optical illusion" specialty cakes professionally, while working full-time in the supply chain industry to support three sons as a single mother.
After a severe spinal injury ended his law-enforcement career in his 30's, Todd spent the past 25 years starting and running businesses, from a media agency and CGI software firm in Silicon Valley during the "dot com" boom to building a motorsports industry parts importation and distribution company.
Pamela is the culinary talent behind everything produced by Robinson Confections, from developing original recipes creations to the artistic touches that turn a simple piece of candy into a visually pleasing and indulgent taste experience. She either produces herself or directly oversees every hand-made batch of candy that carries their company name. Her award-winning Mexican Hot Chocolate is her re-creation of the "Abuelita" hot cocoa from her Mexican roots.
Todd manages the business operation and acts as an "idea man" for some of their new flavors and new lines. The company's logo is taken from Todd's historic familial coat of arms going back 16 generations.
