Founding Story
I’m Maricel Saenz, and I’d love to share a bit about my journey and why I started Minus Coffee. As a Costa Rican, coffee has always been an important part of my life. I’m a biotech and climate entrepreneur, but at my core, I’m also undeniably a coffee lover.
For years, I noticed the effects caffeine was having on my mind and body—unbalanced cortisol spikes, energy crashes, and lingering anxiety jitters that just didn’t align with the lifestyle I wanted. I craved a way to feel energized and focused throughout the day while still getting restful sleep at night. But I realized I didn’t need to give up my favorite ritual—I just needed to reimagine it.
That’s why I created the Minus Instant Oat Milk Latte: a way to enjoy a great cup of coffee minus the drawbacks. It has half the caffeine, plus L-theanine to keep energy levels steady, along with plant-based protein to nourish your body. As women, we often need more protein in our diets, and with our beanless approach, we’re also offering a more sustainable solution. It’s been my answer to creating a balanced, healthier life while still savoring the flavors I love—a product that’s kinder to both our bodies and the planet.
