New York, NY (March 10, 2025) – City Boy Coffee proudly announces the launch of its revolutionary "Ultimate Decaf" line, featuring two exceptional single-origin decaffeinated coffees: Ultimate Decaf Mexico and Ultimate Decaf Ethiopia. This launch is the culmination of months of meticulous research, extensive community tastings, and collaboration with renowned coffee expert James Hoffman.
Driven by a commitment to quality and a desire to address the unmet needs of decaf enthusiasts, City Boy Coffee embarked on a journey to create decaffeinated coffees that defy expectations. The "Ultimate Decaf" project was significantly influenced by James Hoffman's groundbreaking research, which included a massive global tasting event exploring various decaffeination methods.
"Not only do decafs tend to be lower quality coffees, coffee companies don’t give them a lot of consideration. It’s a systemic problem too because decaffeination is an extra step that costs money and there’s an outdated perception that people aren’t going to be particular about the coffee as long as it’s caffeine-free. There are a lot of coffee lovers out there that want the same delicious coffees that they have grown accustomed to but without the buzz. We want to bring those people the same quality experience that we bring to our other coffees."
Through extensive surveys and roastery tastings, City Boy Coffee discovered a diverse range of preferences among decaf drinkers. This led to the creation of two distinct offerings:
Ultimate Decaf Mexico: A sugar cane process (EA) coffee from small farms in Chiapas, Mexico, boasting a sweet and balanced profile with notes of nut butter, maple syrup, and baking spices. This coffee is designed to be approachable and enjoyable for a wide range of palates.
Ultimate Decaf Ethiopia: A Swiss Water processed coffee from two farms owned by Dehab Mesfin, combining dried and wet fermented cherries. This coffee delivers a bright, fruity, and complex experience with notes of brown butter, star fruit, malt, and plum syrup.

The choice of decaffeination methods reflects City Boy Coffee's commitment to quality and flavor. The Ethyl Acetate (sugar cane) process, used for the Mexico decaf, minimizes the impact on flavor, while the Swiss Water process, used for the Ethiopia decaf, preserves the coffee's origin characteristics and acidity.
"We feel like the Ethyl Acetate process, when done well, can make the decaffeination almost invisible. There are some hints, but it’s very subtle. This process is pretty uncommon but we feel like North America could use some EA decaffeination facilities as we currently don’t have any. The coffee from Ethiopia is a Swiss Water coffee and while there are some telltale tasting notes that indicate that it’s a Swiss Water decaf, we feel like this process maintain more origin flavor and acidity than some of the other processing methods which made it a perfect fit for an Ethiopian coffee."
"I feel like these are some of the highest quality decafs you can buy. We put our heart and soul into finding them. If you weren’t paying attention, someone could serve you Ultimate Decaf: Mexico and you wouldn’t know it was decaffeinated. And, Ultimate Decaf: Ethiopia is the fruitiest, most complex decaf I’ve ever had."
