Founding Story
The story of Big Marble Organics traces back to Jamaica, where Dwayne Allen, known by the nickname "Big Marble," developed a love for bold and flavorful beverages. This passion carried over to Phoenix, Arizona, where he opened The Breadfruit & Rum Bar, a renowned restaurant with a vast rum selection. Allen became known for his expertise in crafting tropical cocktails, and one of the most popular drinks at the bar was the Dark and Stormy, a classic combination of dark rum and ginger beer.
For years, Allen relied on a Jamaican supplier for his ginger beer, but when in 2013 the supplier unexpectedly was unable to supply the product, they were without a key ingredient for his signature cocktail. Dissatisfied with the ginger beer options available on the market, he decided to create his own—one that would not only meet but exceed the standards of what he had previously used.
In developing his ginger beer, Allen focused on two critical aspects: flavor and carbonation. The ginger beer needed to be ginger-forward with a strong bite to capture attention. To achieve the desired spice, he used specialized organic ginger oil extract, ensuring a bold, authentic, and fresh ginger flavor. The bigger challenge was perfecting the carbonation. He aimed for a level of effervescence stronger than most sodas, something closer to Champagne, to ensure the ginger beer could hold up as a cocktail mixer, especially in the Dark and Stormy.
After months of experimentation and refinement, Allen perfected his recipe, creating a ginger beer that surpassed anything available. This breakthrough became the foundation of Big Marble Organics. What began as a solution to a cocktail problem behind the bar grew into a full-fledged company, dedicated to producing high-quality, organic beverages.
