All The Bitter reimagines what cocktail bitters can be. Created by two former French Laundry sommeliers, this lineup of 0.0% Alcohol bitters is being served in the country's best bars, and enjoyed at home in drinks with and without alcohol. Handmade in small batches with organic, gut-friendly herbs and adaptogens—and no added flavors, extracts, colors—All The Bitter was designed for the modern drinker. Started in a home kitchen and launched in 2022, the brand has already won 30 industry awards including the IWSC No/Low Spirit Producer of the Year, 2 Double Golds from the SF World Spirit Competition, a Good Food Award, and has been featured in The New York Times, Washington Post, Food Network, Forbes, Martha Stewart, NPR, and Good Morning America.

As a small, mission-driven family business, sustainability and giving back are central to All The Bitter's operations. Based in Chico, California, ingredients like lavender, walnuts, and Meyer lemon are sourced directly from farms within 30 minutes of production, and after the two-month extraction process, spent botanicals are donated to the CSU Chico Farm for cover crop. 1% of annual sales are donated to planting trees, and another 2% of sales support education and recovery from alcohol use disorder.

Founding Story

All The Bitter's story starts at The French Laundry, where Carly and Ian Blessing met and worked together as sommeliers. After getting married and having kids, the couple quit drinking in 2019 and began enjoying the new wave of non-alcoholic spirits on the market. Noticing a gap in the market of fully alcohol-free cocktail bitters, the husband-and-wife team began developing a line of classically inspired 0% ABV bitters in their home kitchen. After testing more than 100 recipes, All The Bitter began production in a shared commercial kitchen in Chico, California, and has since moved into a private 2500 sq. foot facility. All The Bitter is available in nearly 500 bars and retailers around the US, 100 Total Wine locations, Amazon, and can be found in more than 10 countries.

Team Bios

Ian Blessing is a hospitality veteran with over 15 years of experience in food and beverage, including sommelier at The French Laundry and Opus One Winery. After giving up alcohol with his wife Carly, Ian co-founded All The Bitter, a line of non-alcoholic cocktail bitters recognized in 2023 as the No/Low Spirit Producer of the Year by the International Wine & Spirit Competition. Ian and Carly have been called "anchors of the mindful drinking movement" by Derek Brown, author of Mindful Mixology.
