With over 19 years in the culinary industry, Nicolas Ganea opened Sauce Nouvelle back in May after working at restaurants around the country including Seattle, and Chicago. He landed on Bainbridge Island after his friend introduced him to the owners of the Winslow Mall, and decided it was the perfect spot to start his next adventure - a cafe with a fine dining edge.
